Most bread works against your digestion. Our 27-hour fermentation process does the opposite — it pre-digests the grain before it ever reaches you, exactly as Ayurveda has always described ideal grain preparation.
The connection runs deeper than coincidence. Phytic acid — the anti-nutrient found in all wheat — is what Ayurveda calls Ama: accumulated toxin, the root of digestive imbalance. Our fermentation removes 80–95% of it. Long, slow fermentation is Samskara — the intentional processing that transforms raw grain into something the body recognises as true nourishment. The lactic acid produced is Amla Rasa, the sour taste that wakes your Agni and begins digestion before the first bite.
This is not a creative interpretation. The German three-stage sourdough method and Ayurvedic grain wisdom describe the same process — in different languages, from different centuries, arriving at the same answer.
